I came back from a trip to Argentina with a phantom stomach and the illusion that I am still a kid and that I still have the zippy metabolism of my younger kinetic self. I had not been home in 34 years, making this illusion understandable. You can imagine what happened. Mistakes were made, I was under the sway of my phantom stomach, and the little urgings of the gauchita on my shoulder saying, "when will you ever get another chance to eat Lomo in Bariloche with dad?" I went native after 25 years of a healthy Californian (mostly veggie) diet.
The bad: morning morcillas (instead of miso, a poached egg & greens), mid-day steak, and evening milanesas (instead of greens and veggie protein). Oh, and coffee (I have missed you old friend!). Or mate, in a mate, with facturas, medialunas, fresh grass fed butter and jam. Bad, bad, bad, I told you!
The good: fresh chicory & shredded radiccio salads every day with breakfast, fresh berries, and chimichurri which goes with everything. I forgot how much I love this stuff! Now, how can I possibly reverse the adverse effects of my culinary indiscretions and dietary diversions, and help combat the slight nostalgia and homesickness I feel? Make it and share it, of course.
Traditionally this sauce is served with grilled meats in Argentina, its a condiment you see on nearly every table in local restaurants. Try a spoonful of it in scrambled eggs, quiches, omelets even poached eggs. You could also add a dollop of it to guacamole and enjoy it Chilean style. It is a great blood cleaner and immune booster. OK, chimichurri, here we go.
3 bunches fresh organic Italian parsley chopped finely (think pesto)
18-to-36 cloves of organic garlic
1/3 tsp organic red chili flakes
1/3 cup red wine vinegar (or 1 cup fresh lemon juice)
2 tsp hemp oil
5 tbsp organic first cold pressed olive oil
1 dropper full of oregano oil
Store in a 16oz mason jar in the fridge, this is an industrial strength recipe, it is so labor intensive that I make sure one jar lasts me one month. This takes willpower.
Seriously, this is a pretty potent sauce, a little goes a long way. Its like roto rooter for your pooter.
